Xantham Gum is naturally produced from maize and soymeal in a sterile and safe process. Xantham gum improves ice cream stability and provides a finer texture to dough. It is a preferred ingredient of egg and gluten free foods.

Xantham is used to stabilize suspensions, emulsions and foams. Excellent suspension for oil droplets in hollandaise, dressings and sauces.
