Traditional vinegar from Banyuls is aged for 5 years in oak barrels and bottled at the estate. This vinegar is elaborated from natural sweet wines aged for four years in oak barrels under the Mediterranean sun. After a traditional "acetification" this vinegar returns in oak barrels for another twelve months. A naturally subtle sweetness from the grapes is balanced with strong and powerful fragrance of walnuts, beeswax, spice bread, vanilla, and licorice to give an incomparable character to your recipes.
