From the word "feuille" meaning sheet (as in paper sheet) they are used in pastries to give a crunch and texture to a mousse, cake, or bonbon. The extremely thin crepes known as "gavottes" are crushed to create "feuilletine". Think of it as the thinnest and tastiest corn flakes you ever had.
