Fennel Pollen Fennel Pollen or Fiore di Finocchio in italian in described in a Saveur magazine article using the following image: "If angels sprinkled a spice from their wings, this would be it." A bold statement for sure, but considering the intense flavor of this spice it's no wonder someone has to invoke skies high above. It takes quite a lot of wild fennel flowers to collect only an ounce of this pollen, making this spice almost in the same price range as saffron. The flavor is very intense and quite different from anything you may have tasted before. It's a much sweeter fennel seed but brought to the power of 10! A complex flavor mixing anise, honey, and hay give this exotic spice the ability to elevate your recipes... sky high! This fennel pollen is imported directly from Italy where they bake it in bread, and also add it to olives or make pesto.

As special and rare as it is, wild fennel pollen is extremely easy to use and will enhance roasted chicken, baked fish, or roasted potatoes. You will find many uses for this spice, a simple pinch is enough, as it adds bright bursts of flavor to anything, including your salads.
