In the heart of Provence between Luberon and Ventoux, blossoms a treasure of French gastronomy: The black truffle. Brillat-Savarin called it the Black Diamond of cookery. Known by scientists as Tuber Melanosporum or Perigord truffle in Provence we named it: ÒThe RabasseÓ. Like Christian Etienne, whose restaurant face the famous Palais des Papes in Avignon, you will delight yourself and guests using the sauces, condiments, and dressings he has elaborated for the Truffieres de Rabasse. A neutral oil (grapeseed) and a rich balsamic vinegar perfumed with tones of deep forests gives an exceptional flavor to this vinaigrette containing 3% black truffle. Use with your salad and to top warm vegetables: leeks, asparagus or potatoes.
