Verjus from Perigord Green Grapes
In ancient and traditional French cuisine, verjus was used in preference to vinegar or lemon. Today it is used for de-glazing, marinades, sauces and/or seasoning salads. Its acidity, not as sharp as vinegar or lemon, enables Verjus to be used in fine dishes without spoiling the flavor of great wines accompanying them.
