Everything about this chocolate is rare... A union of subtle harmony, it blends highly aromatic Criollo with Trinitario from the famous Venezuelan regions of Barlovento and Paria Peninsula. The resulting pungent flavor is both tangy and fruity.
In 1646, Alonso de Ojeda discovered the Warao indians,or "dugout canoe masters". Their well-designed stilt homes may have inspired the name for Venezuela: "little Venice". Rich in both culture and vegetation, this precious land is still home to same of the rarest hundred-year-old cocoa trees in the world.
Cacao Barry: Pioneer for more than 165 years
In 1842, starting out from tea and coffee, Charles Barry, true innovator with a passion for chocolate, decided to go to Africa and seek out a selection of cocoa beans that would enable him to create his very first connoisseur's chocolate.
A hint of bitterness marks this chocolate with fruit and acidic overtones.
Ingredients: Cocoa mass, sugar, cocoa butter, natural vanilla.
Tempering: Crystallization Temp:
(+/- 2ºF) Melting at 113-122ºF, cooling to 81ºF, re-heating to 88-90ºF, use at 68ºF
