Locust Bean Gum is an edible thickening agent also sometimes referred to as carob gum, carob bean gum, or carobin, classified under the E410 denomination it is a vegetable gum extracted from the seeds of the Carob tree. It is used as a thickener and/or gelling agent in pastry, ice cream, and molecular gastronomy. It is soluble in hot water.
