The solution for "Caviar" production At least a more dependable and simpler solution for the creation of pearls or caviar in molecular gastronomy that do not involve the building of a complex apparatus. 96 wells will drop at once 96 droplets of your favorite molecular gastronomy mix into calcium chloride or calcium lactate to create your "pearls". EZ - Pipette 96 are sold with a 60 ml syringe.

Pour into bottom of container the liquid and fill the wells by pumping with the syringe - Do Not Overfill wells over the top - When wells are filled to capacity place the pipette over your calcium solution and push the piston on the syringe to release liquid.
