The osetra is harvested from fish that can weigh up to 600 pounds, and take 12 years to mature in the Iranian waters of the Caspian Sea. The Osetra Persicus (Acipenser Persicus) is a medium-sized sturgeon family member. It can attain lengths of 7 feet and tips the scales at 500 plus pounds. The average osetra is 4 feet long and weighs between 50 and 180lbs.
