Verjus from Perigord - Verjuice or verjus in French means green juice as in sour juice. Pressed from unripe or vertes grapes verjus is less acidic than vinegar or lemon. A staple of traditional French cuisine, verjus is preferred in vinaigrettes where it adds a more a complex taste and brightens the olive oil. It is also widely used for de-glazing, marinades, sauces and the seasoning of salads and greens. Its low acidity enables Verjus to be used in fine dishes without spoiling the flavor of great wines accompanying them.
