Pure Dominican Republic - Bahibe. Dark Milk Couverture chocolate, 46% minimum cocoa, pure cocoa butter. A blend of Forasteros-type cocoa beans, with whole milk, cane sugar and a touch of malt. Darker milk chocolate than Jivara, not as sweet and rich in cocoa with intense hints of caramel and vanilla. Technical uses: pastry, chocolate fillings, couverture, icing.
Thanks to its high cocoa content, BAHIBÉ adds intense cocoa notes to its gentle milky flavor, with nutty hues, fruity acidity and a slightly bitter edge.
Ingredients: Sugar 30.27%, cocoa butter 25.5%, whole milk powder 23.1%, cocoa beans from the Dominican Republic 20.7%, emulsifier: sunflower lecithin 0.4%, natural vanilla extract 0.03%. This product may contain traces of nuts, egg proteins, gluten and peanut.
Valrhona feves are easier to melt than bars -- does not require breaking and/or chopping -- Each feve weighs 3gr making it easy to weigh without a scale -- 19 feves equals 2 oz.
