Angelica Archangelica best climate for growth is in the "Marais Poitevin" region, a marsh region west of Niort in France. This regional park, also known as "Green Venice" for its multitudes of canal and luxurious vegetation, is where Angelica Archelangica is grown and then harvested in early to late spring. Fresh angelica stems are then processed and candied and turn in this staple of cake decorations.
It is used as an attractive light, bright green decoration for cakes, cookies, and ice cream. Candied angelica is also especially popular in Sicily, where it is traditional for cassata, a cake layered with sweetened ricotta studded with candied fruit and covered with bittersweet chocolate icing.
