Gold Strength A basic ingredient used by all pastry professionals for such recipes as mousses, charlottes and aspic. Easier to measure and use than powdered gelatin. Comes in two strengths: Silver sheets are 2.5 gr each and 160 bloom. Gold sheets are 2 gr each and 200 bloom. Each sheet measure 2-3/4 x 9. Keep in a dry environment. Sold in re-sealable plastic bag of 20 sheets or 1kg box. Soak for 5 to 7 minutes in cold water. Squeeze excess water and add to hot preparation to dissolve.
