IRCA (Italy) is a century old company, created in 1919, that provides some of the most sought after pastry preparations to European pastry chefs and caterers.
Their GLUTEN FREE Crème Brulée is a powder mix, semi-finished confectionery product for the preparation of Crème Brulée.
Ingredients: Sugar, starch, gelling agent: carrageenan (E407), natural flavor, beta carotene color. This mix may contains traces of soy, and milk.
Preparation:
Crème Brulée Mix 70 g / 2 oz
Milk 250 g / 9 oz.
Cream 200 g / 7 oz.
Stir into the Creme Brulee mix about 100 g of warmed milk, avoiding the formation of lumps. Add the remaining warmed milk and cream and heat until reaching boiling temperature while constantly stirring. Pour the mixture into heat resistant molds and place in refrigeration for about 2 hours. Immediately before serving spread the surface with brown sugar and caramelize with torch.
Product should be stored in a cool and dry place.
