Stabi Sorbet - Thickener, stabilizer and anti-crystallization agent. It is highly recommended as a stabilizer for Sorbets preparations. Use: 3 to 5 gr per ltr or about 1/10 to 1/16 oz. per qt. of sorbet.
- Improves the velvetiness, finesse and smoothnes while preventing ice crystals formation
- Emulsify the mix while correcting its viscosity
- Improves the lightness by increasing the coefficient of expansion
- Delay the thawing in ice sticks
