Gumbo File is actually the ground and powered leaves of the sassafras tree, native to the Southwestern United States. Native Americans used it long before it became essential to the Cajun and Creole cooking of gumbos, soups and stews. It not only imparts an unusual flavor, but also acts as a thickening agent for liquids.
