Pectagel 843 - A gelling agent and thickener. Gives a thermoreversible and thixotropic gel. Use for marble ice creams, fillings or decorations for fresh pastries, and cold toppings.
Recommended Dosage:
- 1 to 1.5% of weight in ripples.
- 0.3 to 0.5% of weight in caramel sauce for topping.
