Sorbitol Sorbitol is a compound naturally found in many fruits and berries and synthesized from glucose. It is widely used as a moisture-stabilizing agent in production of confectionery but also in baked goods and chocolate. Sorbitol prevents brittleness and excess of drying. It may also replace sugar when preparing reduced calorie recipes.
