Lemon grass, sometimes referred to by its French name Citronelle, is ever present in Thai and Vietnamese cooking. The entire plant, including the bulb, of this pungent herb can be used for culinary purposes but use sparingly. The light lemon flavor lends itself well to broth and teas, while the stronger taste blends well with garlic, chilies and cilantro.
