La Canadienne White Wheat flour is Organic and Unbleached. This flour is sifted to remove all bran. Additive, preservative and GMO free. Its low gluten content and low hydration makes it perfect for pastries.
This flour should be stored in a dry (less than 50% moisture) and cool (16C/60F) environment. Under this conditions this flour has a shelf life of approximately 12 months.
Our White Orford flour is a T45 equivalent with a low gluten content, often referred as "Cake" flour, and is excellent for both cake and pastries.
